Pouring an intense, deep ruby-black colour, this is a beautifully rich and full-bodied oak-matured red wine. The nose is inviting, offering a complex bouquet of ripe plum, vibrant red fruits, and wonderfully perfumed oak. On the palate, it delivers fantastic concentration with a lush, fruit-filled middle, leading into a long, satisfying aftertaste loaded with blackberries and warm undertones of spice. While it is incredibly rewarding to drink now, its excellent structure means it will continue to develop and improve over the next 3 to 5 years.
The robust structure, ripe fruit, and gentle oak spice make this blend a sensational partner for hearty, savoury dishes. It absolutely shines when served alongside classic roast beef with all the trimmings, braised lamb shanks, or a perfectly grilled, pepper-crusted steak. For vegetarian pairings, look to rich and earthy flavours like a hearty mushroom stroganoff, lentil shepherd’s pie, or aged cheddar and gouda cheeses.
Showcasing a classic blend of 74% Cabernet Sauvignon and 26% Merlot, the grapes for this wine are carefully harvested by hand. In the cellar, they are crushed and destemmed into stainless steel tanks where both natural and inoculated fermentations take place. To gently extract colour, flavour, and tannin, pump-overs are performed twice daily. Following alcoholic fermentation, the wine is left on its skins for an additional 12 days to build mouthfeel and complexity. It is then matured in 225-litre French oak barrels for 12 months before being certified and bottled on the farm.
