The nose is incredibly inviting, leading with unmistakable aromatics of cedar spice and pencil shavings, layered over ripe plums and elegantly integrated oak. On the palate, it delivers full-flavoured depth with a wonderfully firm structure that is both supple and fresh. While deeply enjoyable now, it has fantastic ageing potential and will continue to develop and reward cellaring for the next 6 to 8 years.
With its firm tannins, cedar spice, and dark fruit, this quintessential Cabernet is the perfect partner for rich, protein-heavy dishes. It shines brilliantly alongside a thick-cut, perfectly grilled ribeye steak, slow-braised short ribs, or a classic beef Wellington. For vegetarian options, opt for robust, earthy flavours like grilled portobello mushrooms, deeply savoury lentil and walnut roasts, or a board featuring aged hard cheeses like mature cheddar or Gouda.
Sourced from beautifully established 24-year-old vines, the grapes for this Cabernet Sauvignon are carefully harvested at full ripeness, with yields restricted to a concentrated 5 tons per hectare. In the cellar, both natural and inoculated fermentations take place at a controlled 26°C, with pump-overs performed twice daily to ensure gentle extraction. After alcoholic fermentation is complete, the wine is left on its skins for an extended 14 days to build maximum depth of flavour and structural complexity. Finally, it is elegantly matured in 225-litre French oak barrels for 16 months before bottling.
