Crafted in an incredibly vibrant, fruit-driven style, this Sauvignon Blanc is a celebration of fresh, tropical flavours. With its bright acidity and lively fruit notes, this Sauvignon Blanc is the ultimate companion for warm-weather dining. It pairs exceptionally well with fresh seafood — think seared scallops, grilled white fish with a squeeze of lemon, or fresh oysters. It’s also spectacular alongside a vibrant summer salad, grilled asparagus, zesty ceviche, or a creamy goat cheese tart, as the wine’s acidity beautifully cuts through the richness.
The grapes for this wine are meticulously harvested by hand into small baskets at optimal ripeness (between 21 and 23°Balling). Keeping yields low at 7 tons per hectare ensures concentrated flavors. Once in the cellar, the grapes are given 4 hours of skin contact prior to fermentation to extract maximum aromatics. The wine is then 100% tank-fermented and left to age on its gross lees for 4 months. During this time, weekly bâtonnage (lees stirring) is employed to build a richer, creamier mouthfeel and added complexity before the wine is finally stabilised and bottled.
