AROMA & FLAVOUR

Blueberry and bruised plum first, then mixed herbs and a soft note of cigar box underneath. The palate is concentrated without being heavy — rich through the middle, with a long, refined finish that keeps its shape.

It’s a wine built for keeping. Prologue rewards time in the cellar, and in magnum it will age more slowly still.

PAIRING SUGGESTIONS

Prologue is a red blend with enough structure to stand up to serious food, and the herb and cedar notes make it a natural partner for anything cooked over fire.

Lamb — especially with rosemary or thyme. The herbal thread in the wine picks up the herbs on the plate
A proper braai — sirloin, rib-eye, boerewors. The concentration handles char and smoke
Slow-braised short rib or oxtail — long cooking meets a wine with a long finish
Venison and game — kudu, springbok. The cigar-box note sits beautifully against gamey meat
Mushrooms — a wild mushroom risotto or roasted portobello, if you’re not eating meat
Aged hard cheese — a mature Gouda or a farmhouse cheddar, at the end of the evening

Serve at around 16–18°C, and open it an hour before you pour. A magnum is worth decanting.

WINEMAKING

A format we don’t normally make

Magnums are a nuisance to produce. The glass costs more, they do not run properly down the line, and every case is heavier than it needs to be.

We make them anyway, for two reasons.

The first is that wine ages more slowly in a magnum. A magnum holds 1.5 litres, exactly two standard bottles, but it has the same neck and the same cork as a 750ml bottle, so it traps about the same small pocket of air. Twice as much wine sits underneath it. Each mouthful therefore meets roughly half the oxygen it would meet in a standard bottle.

Oxygen is what moves a wine forward. It softens tannin, turns primary fruit into something savoury, and eventually takes the wine past its best. Halve the oxygen and you slow all three. The same rule runs in reverse, which is why a half bottle is always older than its age.

The second reason is that putting one on a table does something a standard bottle simply does not.

This year we made 500. That is 125 sets of four, and when they are gone the format goes with them.
